Fresh Flounder

Surprise surprise, surprise, Lakewood's Giant Eagle has today, fresh Flounder, not frozen, or "refresh" , a phrase Henine's like to use to disguise the fact that it is defrosted. But Fresh flounder, the most delicate succulent fish ever. So tender , it melts in your mouth, no fishy smell or taste. I buy a pound, also in the seafood case, they have some kind of seafood salad, I buy that too, I get home and dry the flounder, take a heaping spoonful of the seafood salad and roll the flounder up around it, secure with a tooth pick, I melt a little butter with paprika, and spoon that sauce over the rolled flounder, and bake it in the oven for 15, 20 minutes, keep checking it, it is thin and cooks very quickly, take it out and let it rest for 5 minutes, hot or cold, delicious. omg. stuffed flounder. a lb gives you 4,5 servings, the best..
