Chef, I need some advice
My wife keeps offering to serve me up a nice dish when I get home late from work for so many nights in a row. I want to accompany the dish and show her that I care, but I can't seem to find what pairs well with a knuckle sandwich. Any advice?

You're going way back here......But a favorite old German/East European dish was indeed pigs knuckles. They are frequently served with kraut and boiled potatoes (or potato pancakes).
They are pretty heavy, and a nice cold true pilsner would go very well.
In sort of a related culinary issue, you have putting feet in your mouth. Pickled pigs feet used to be a popular "bar food", but again, have lost their popularity.
Many times, getting these feet in your mouth leads to the knuckles.

The spouse who works late should be served a nice meal or snack, and a refreshing beverage in a glass, by the spouse who was home first. That is just common courtesty. it may even be in the Bible.
